Cooking and College Students

Please believe me when I tell you that you do not want to be eating macaroni & cheese and Raman noodles every night. This is terrible for your body. Besides, contrary to popular belief, cooking doesn't have to be complicated. What you need are the right recipes and/or an imaginative heart.

There are recipe books that were put together specifically for college students who have no time and no cooking skills. Consider purchasing The College Cookbook, Starving Student's Cookbook, Cooking Outside the Pizza Box, Where's Mom Now That I Need Her?, The Healthy College Cookbook, or another college recipe book. You'll be glad you did.

For some people, recipes just aren't their thing. No problem! When it's dinner time simply grab a bunch of stuff that go together and throw them in a pot or pan. Use meat and/or noodles or rice as the base and then add vegetables. Try chicken, rice, and steamed carrots. Or ground beef, onion, corn, tomato sauce, sliced olives, noodles, and oregano leaves. Salt and pepper to taste and throw some cheese on top. Experiment all you want.

Here are other easy meals: spaghetti with sauce, chicken Alfredo, chicken Caesar salad, Stone soup (throw anything you want in it), hamburgers, hotdogs, pasta tuna salad, three bean salad, and anything in a crockpot.

Also, absolutely do not skip breakfast! Cereal, fruit, yogurt, and oatmeal make quick and easy breakfasts. You can also make pancakes, muffins and biscuits. If you don't have time to make them from scratch, use a mix! Skipping breakfast is hard on your metabolism. Avoid it at all costs. If you're really in a hurry grab a granola bar or an apple, but get something in your stomach.


SIMPLE RECIPES

Breakfast

Basic Smoothie
Prep Time: 5 minutes
Yield: 1 serving

1 cup liquid of choice (milk, yogurt, orange juice, pineapple juice, etc)
1 banana fresh/frozen in 1” pieces
¼ cup other fresh or frozen fruit

1. Blend on high.


German Pancakes
Prep Time: 8-10 minutes
Cook Time: 20 minutes
Yield: 6 servings

6 eggs
1 cup milk
1 cup flour
1/2 tsp salt
2 tablespoons butter

  1. Preheat oven to 400 degrees.
  2. Melt butter into a 9x13 baking dish.
  3. Blend remaining ingredients in blender.
  4. Pour into buttered baking dish.
  5. Bake for 20 minutes or until golden.
  6. Sprinkle with powdered sugar and/or syrup. Cut into squares, serve warm.


Buttery Farm Biscuits
Prep Time: 10-12 minutes
Cook Time: 20 minutes
Yield: 12 small biscuits

2 cups flour
1 Tbsp baking powder
¼ tsp salt
¼- ½ cup cold butter, cut into small pieces
¾ cup skim milk
  1. Heat oven to 400 degrees.
  2. Combine first 3 ingredients in a bowl.
  3. Cut the butter into the mixture until it looks like coarse crumbs (use 2 knives or a pastry blender to do this.)
  4. With a fork stir in the milk, very gently, until a soft dough forms. Don't over mix.
  5. Place the dough on a baking sheet and with floured hands press it into a 9" x 9" square.
  6. Use a spatula or the dull side of a knife and cut the dough into 12 biscuits without fully cutting them apart.
  7. Bake for 15-20 minutes or until golden.
  8. Transfer to a wire rack & cool for 5-10 minutes. Serve with jam, gravy, or butter.
